Coco Veggie Stir-Fry with Quinoa
This is a quick and easy meal for those busy weekdays. Make enough so you can have leftovers for lunch the next day. Use your favorite seasonal vegetables. The more the merrier! We suggest visiting your local farmers market.
Servings 2 servings
- 2 tbsp Tropic Oil
- 1/2 medium Red Onion
- 2-3 Cloves Diced garlic
- 1 cup Broccoli
- 1/2 cup Sliced Carrots
- 2 tbsp Chopped basil
- 1 tbsp Italian parsley
- 1/2 cup Cooked Quinoa
Prepare one cup of Quinoa according to package instructions. Set aside.
Heat your wok or sauté pan for 1-2 minutes. Add in the Tropic Oil and add in sliced onion until they are translucent. Around 2-3 minutes. Add in garlic and sauté for 1-2 minutes.
Add in carrots and sauté for 2-3 minutes. Add in all other veggies and cook for 4-5 minutes. Turn off heat and sprinkle in basil and parsley.
Spoon 1/2 cup of quinoa in bowl. Add in half of the stir-fry. Enjoy!
