Coco Veggie Stir-Fry with Quinoa
- 2 tbsp Tropic Oil
- 1/2 medium Red Onion
- 2-3 Cloves Diced garlic
- 1 cup Broccoli
- 1/2 cup Sliced Carrots
- 2 tbsp Chopped basil
- 1 tbsp Italian parsley
- 1/2 cup Cooked Quinoa
- Prepare one cup of Quinoa according to package instructions. Set aside.
- Heat your wok or sauté pan for 1-2 minutes. Add in the Tropic Oil and add in sliced onion until they are translucent. Around 2-3 minutes. Add in garlic and sauté for 1-2 minutes.
- Add in carrots and sauté for 2-3 minutes. Add in all other veggies and cook for 4-5 minutes. Turn off heat and sprinkle in basil and parsley.
- Spoon 1/2 cup of quinoa in bowl. Add in half of the stir-fry. Enjoy!
